The list option is grayed out. I'm not at capacity on either guild stores, and I can't list items either from the actual trader or the bank. I've reloaded the ui lots and lots of times, doesn't make a difference. And even typing the R won't let me list items. I'm able to sell per the permissions for my roster rank on both guilds.

Major towns usually have better stocked traders, try a place like Rawlk'ha, Riften or Belkarth. To see your guild's trader, open the guild page (G) and in the first tab you should see spaces for owned trader and keep in Cyrodiil. You probably don't have a keep, but the trader's name and location will be visible - if you have a trader, that is.

I don't think they've been added to the UESP map yet, but there is a list of Guild Kiosk locations available, which will say when one is near a Wayshrine or whatever, and then you can use the map to find that Wayshrine.
The guild traders in this city directly operate in the "Mourner's Market" which completely surrounds the wayshrine that you land at making this one of my personal favourite spots to shop - quick in, quick out. Here you will find seven traders: Endoriell. Erwurlde. Gals Fendyn. Hayaia. Razgugul.
