This first one gave me a ton of rewards when I finished, 10s of thousands of nanites and millions of units (which I don't really need on my main save). When I finish the expedition on a new save, do I get the same rewards? It seemed like the rewards were based off distance traveled, distance walked, number of creatures scanned, etc.

Kind of depends. The first Expedition set up players nicely (except for the lack of save point), and I imagine lots of casual players ended up with a more established and rounded save after that. But the second expedition mostly just gives you freighter stuff. It is certainly possible to then keep that save and progress with it afterwards but ...
If you missed an Expedition or any rewards, you can't currently get them any other way. They may run expeditions again, or eventually make the rewards available in the Quicksilver shop, but that is mere speculation, not official info. If you're fine with cheating, you can edit a game file to convince the game that you completed the expeditions.
